It will create a stereo file and save it but all the loaded files change to a mono file.
How do I stop it to load stereo files as normal again?

Recently Goldwave has started to change all files to mono when opening.

Sorry but I have to ask the stupid question: Are you sure the file is being saved as stereo? Have you played or opened a saved file in any other audio program to be sure it is still a stereo file?
I don't know of any way GoldWave changes a file from stereo to mono when opening, but it would be quite easy to change your default file format settings to save mono and it might not be readily apparent.
